The Hyatt knows pure imagination / Photo by: Jarod Powell
Our stay begins at the Grand Hyatt in Santiago where Dahl-esque elevators travel high above the city skyline allowing for incredible views from each room. From ours on the 14th floor, the sights are breathtaking – a view for miles of high-rises draped with potted plants and etched into a backdrop of the Andes mountain range.

Not to mention the pool. A bit of vitamin D in January – totally necessary.

Osadia : A memorable meal
(thankfully without the presence of parmesan anywhere)
Swordfish carpaccio with cilantro

Octopus & Sea Bass Ceviche (yes, that is monster corn on the side.)

Adorable strawberry sorbet palette cleanser (though a citrus or mint sorbet would’ve made more sense.)

Turbot a la Plancha con Papas Chips
